Like Sambar Powder and Rasam Powder, Puli Kuzhambu powder is a handy home made masala powder in our kitchen. We can make instant kuzhambu using this Powder (Podi). Instead of adding coriander powder and red chili powder for the puli kuzhambu, this Puli kuzhambu powder can be added which gives a great flavor. We can easily increase the ratio of each ingredient and make it in large quantities as it has a  long shelf life. We can even keep it for 6 months to a year by carefully handling the podi with the use of air-tight container and also using dry spoon.

How to make Puli Kuzhambu using this Kuzhambu Powder?

As usual we can use tamarind paste or soak tamarind in water and extract the juice. After tempering of mustard and curry leaves,  sauté shallots (or finely chopped onions) till translucent. We can also add vegetables once onions turn translucent and then add water to cook the vegitables. When the veggies are almost cooked, add the tamarind paste (or tamarind extract) along with 2 tablespoon (adjust to your spice level) of this puli kuzhambu powder along with salt and then boil till the raw smell of the podi and tamarind juice goes off.  Finally adjust consistency by adding water.

Puli Kuzhambu Powder is a home made masala powder which can be used to make Kara Kuzhambu / Puli Kuzhambu or Vatha kuzhambu instantly. We can make it in bulk quanities and use it for upto 12 months. With this powder the Kuzhambu can be made instantly without any hassle of grinding every time while making the Kuzhambu.

Ingredients

  • 20 nos Red Chili (about 60 grams)
  • ¾ cup Coriander seeds
  • 1 tablespoon Split Bengal Gram (Channa Dal / Kadalaparuppu)
  • 1 tablespoon Toor Dal (Pigeon pea)
  • 1 teaspoon Black Pepper
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Fenugreek seeds
  • 1.5 teaspoon Raw Rice
  • 1 sprig Curry leaves

Instructions 

  • Dry Roast each ingredient separately (one by one) till each ingredient becomes warm and till nice aroma come out of the ingredients. Don't let any ingridents burnt.
  • Take all the roasted ingredients in a plate and cool it completely.
  • Take it in a mixer and grind it to a smooth powder
  • Store it in an air-tight container, Add a tablespoon of this delicious Puli Kuzhambu Podi and make instant kuzhambu!
