Boondi Raita, a yogurt dip enriched with crispy deep fried Boondi pearls. Raita is a yogurt sauce with spices and a mix of vegetables like Onion, Cucumber, Tomato, Bindi etc.,  Yogurt (curd) is an integral part of our (Indian) food.  With heavy meals like Biriyani / Pulao, the Yogurt is getting added in the form of Raita as an accompaniment. It helps to cool and balance out the heat from the spices. Raita can be made in about 10 minutes with minimum ingredients. The crispy boondi pearls adds a nice crunchy taste to raita.

Boondi / Kara Boondi is a crispy deep fried besan pearls. We can make Boondi easily at home. Boondi can be spiced or just made with salt. For Boondi Ladoo /Motichoor laddoo we don't add salt. If we soak the boondi in yogurt for a long time before serving, then the boondi will become soggy. So just before serving the raita, add boondi to yogurt and give a mix. Serve immediately.

Ingredients

  • 1 Cup Curd (Plain Yogurt) 1 Cup - 250ml
  • ¼ teaspoon Salt
  • ½ teaspoon Roasted Cumin Powder
  • ¼ teaspoon Red Chili Powder
  • ¼ teaspoon Pepper Powder
  • ¼ teaspoon Chaat Masala
  • 1 tablespoon Coriander Leaves
  • ½ Cup Kara Boondi

Instructions 

  • Take yogurt/curd in a mixing bow.. Whisk well.
  • Add salt, roasted cumin powder, red chili powder, chaat masala and pepper powder. Give a good mix.
  • Next, add chopped coriander leaves. Mix well.
  • Finally add the crispy boondi to the spiced yogurt. Gently mix.
  • Relish Boondi Raita with Pulav / Biryani varieties.

INSTRUCTIONS WITH STEP BY STEP PICTURES:

  • Take yogurt/curd in a mixing bow.. Whisk well.

  • Next, add chopped coriander leaves. Mix well.

  • Finally add the crispy boondi to the spiced yogurt. Gently mix.
