
Kothamalli Rice (Coriander Leaves Rice), a very delicious Rice variety, with richness of coriander leaves and mild spices. Any greens are very nutritious and has to be included in our diet often. Many kids have an aversion to eat spinach. But unlike spinach, coriander leaves are so aromatic and flavorful. So, it’s easier to make kids eat coriander than any other greens. Coriander leaves has lots of nutritional benefits and we generally add coriander leaves in most of the recipes. In few recipes, coriander leaves are part of main ingredients but for most of the recipes we use coriander leaves for garnishing.
Coriander Leaves rice can be made with different variations by adding masalas. But this one is simplest method made just by coriander leaves and mild spices. My mom used to pack this yummy and healthy rice for my lunch box during my school and college days. The smell of this wonderful rice is fascinating and I love this simple and yummy rice always. This can be served with any stir-fry vegetables like Ladys Finger fry or Potato fry

Coriander leaves are very good for health. These are stimulant and tonic. They strengthen the stomach and promote its action, relieve flatulence, increase secreation and discharge of urine and reduce fever. It is highly beneficial in deficienceis of vitamin A,B1,B2,C and iron.

Kothamalli Rice (Coriander Leaves Rice) is one of the simple and tasty rice variety. Coriander rice can be made in different ways and variations by adding different masalas. But this one is very simple method, made without any masala items, but just the tempering and the coriander leaves. Perfect for the kids lunch boxes. This can also be made using left over rice.

Ingredients
- 2 cups Coriander Leaves chopped, tightly packed
- 1 cup Cooked Rice 1 cup - 250 ml
- ¾ teaspoon Salt (adjust to your taste)
For spice mix
- 1 teaspoon Oil preferably coconut oil
- 1 tablespoon Urad Dal
- 2 nos Green Chili (adjust to your spice level)
- 1 pinch Tamarind
For Tempering
- 2 teaspoon Ghee
- 1 teaspoon Mustard seeds
- 1 teaspoon Split Bengal Gram (Channa Dal / Kadalaparuppu)
- 1 teaspoon Split Urad Dal
- 1 teaspoon Roasted Peanuts (optional)
- 5 nos Cashews (optional)
Instructions
Preparation
- Rinse the Kothamalli( Corainder Leaves) well in water and strain the water. Chop them roughly and keep it aside
Making of Spice Powder
- Heat the oil in the pan. Once the oil is hot add the urad dhal and green chili. Fry them till the dal becomes golden brown color. Add this to the mixer.
- Next, add the rinsed Kothamalli(Corainder Leaves) leaves and fry for a minute or so till its raw smell goes off
- Take this into a mixer. Also add salt and a pinch of tamarind. Grind them to a powder without adding water.
Tempering
- Heat the oil/Ghee in the pan and add mustard seeds. When the mustard seeds start to sputter, add channa dhal, urad dal, roasted peanuts and cashew nuts and fry until the cashews becomes golden brown color.
Making of Coriander Leaves Rice
- Add the rice and ground kothamalli(Corainder Leaves) mixture.
- Mix everything well and adjust the salt if needed.
- The delicious Kothamalli (Corainder Leaves) rice is ready to serve
Notes
You can also try ...
Instead of Coriander leaves use bangalore brinjal. Chop the brinjal to the fine pieces and half cook it. If you have microwave oven cook the brinjal without adding water for about 3-4 mins. Use the half cooked brinjal in the above recipe instead of coriander leaves. You will get a different flavor of brinjal and brinjal 'haters' also love this rice.

Method:

Fry it till the dhal becomes golden brown color. Add this to the mixer. Next, add the rinsed Kothamalli(Corainder Leaves) leaves and fry for sometime till its raw smell goes off


- Grind these in a mixer along with salt, a pinch of tamarind and grind it without adding water.


- Heat the oil/Ghee in the pan and add mustard seeds.When the mustard seeds start to sputter, add channa dhal, urdhal and cashew nuts and fry until it becomes golden brown color. Now add the rice and ground kothamalli(Corainder Leaves) mixture


- Mix everything well and adjust the salt if needed.

- The delicious Kothamalli(Corainder Leaves) rice is ready to serve
