The addition of red chili powder and cumin powder gives the roti a mild kick, making it aromatic and flavorful. Salt and a bit of oil or ghee help bind the dough together, ensuring that each roti turns out soft yet slightly crispy.

Substitutions
Here are some substitutions you can make for Missi Roti to suit different dietary preferences or to customize the flavor:
- Gluten-Free: Use gluten-free flour (like rice flour or Sorghum flour or any millet flour) in place of whole wheat flour.
- Vegan: Instead of using ghee or butter, use olive oil or coconut oil to cook the rotis.
- Higher Protein: Add chickpea flour (besan) as the primary flour to make a more protein-rich version, or combine it with quinoa flour.
- Millet Roti: Replace whole wheat flour with millet flour (like bajra or jowar flour) for a gluten-free, nutrient-packed alternative.
- Herb Variations: Add herbs like cilantro or fenugreek leaves (methi) for extra flavor and nutrients.
Variations
Here are a few variations you can try while making Missi Roti to suit different tastes and preferences:
- Herbed Missi Roti: Add finely chopped coriander leaves or fenugreek leaves (methi) to the dough for extra flavor and freshness.
- Cheese Stuffed Missi Roti: For a delicious twist, stuff the dough with grated cheese (like paneer or mozzarella) and roll it out to create a cheesy version of Missi Roti.
- Spicy Missi Roti: Increase the red chili powder or add green chilies and garam masala for a spicier, more aromatic version of the roti.
- Masala Missi Roti: Incorporate cumin seeds, carom seeds (ajwain), and black sesame seeds into the dough for an extra burst of flavor.
- Millet Flour Missi Roti: Swap out whole wheat flour for bajra (pearl millet) or jowar (sorghum) flour to make a gluten-free version of the roti.
- Sweet Missi Roti: Add a tablespoon of jaggery or honey to the dough, along with cardamom powder, for a lightly sweet variation.
- Garlic Missi Roti: Add minced garlic or garlic powder to the dough for a flavorful garlicky version, which pairs well with curries.
- Chia and Flaxseed Missi Roti: Mix in ground chia seeds and flaxseeds for a healthier, nutrient-packed variation.
Feel free to experiment with these variations to add your unique touch to Missi Roti!
Storage
- Room Temperature: If you plan to consume the rotis within a day or two, store them in an airtight container or wrap them in a clean cloth and keep them at room temperature. They will stay soft for up to 2 days.
- Refrigeration: For longer storage, refrigerate the rotis in an airtight container or wrapped in foil. They can stay fresh for up to 3-4 days in the fridge.
- Freezing: To store for a longer period, place the rotis in a freezer-safe bag or wrap them individually in plastic wrap and then store them in a zip-lock bag. They can be frozen for up to 1 month. When ready to eat, reheat on a hot pan or microwave.
- Reheating: To reheat, warm the roti on a pan or in the microwave. You can brush a little butter or ghee on it to restore its softness and flavor.
Proper storage ensures that your Missi Roti stays fresh and delicious for as long as possible!
Top Tip
To achieve the perfect texture, always let the dough rest for at least 10-15 minutes after kneading. This helps the flours absorb moisture fully, making the dough softer and easier to roll out. Additionally, cook the roti on medium heat to ensure it cooks through evenly and becomes slightly crispy on the outside without burning.
