This soft yet crispy roti pairs perfectly with a variety of curries, dals, and pickles, making it a versatile addition to any meal. Whether you’re new to Indian cuisine or a seasoned food lover, this Missi Roti will quickly become a favorite in your kitchen! Keep reading to learn how to make this fan-favorite bread.

Missi Roti – A traditional Indian flatbread made with gram flour (besan), whole wheat flour, and aromatic spices, served hot with butter and pickle.

Missi Roti is a popular dish throughout the year, but it holds a special place during winter months in India, as the warm, hearty bread complements the cooler weather perfectly. It is often enjoyed during festivals like Diwali, Lohri, and Makar Sankranti, when families gather for feasts. It's also a common choice during special occasions or family meals, paired with rich curries, dals, and pickles. In many households, it’s made as a comfort food to enjoy with a cup of chai or as a satisfying breakfast option.

This Missi Roti recipe was inspired by my other delicious creations on the SubbusKitchen site, especially my flavorful NO ONION NO GARLIC GUJARATI DAL recipe, which pairs beautifully with this hearty, spiced flatbread. The combination of the creamy, tangy dal with the warm, crispy roti creates the perfect meal. For a truly satisfying experience, don’t miss out on trying them together – they’re a match made in heaven! You can find the full NO ONION NO GARLIC GUJARATI DAL recipe

Ingredients

For this Missi Roti recipe, using the right ingredients is key to achieving that perfect texture and flavor. The combination of gram flour (besan) and whole wheat flour provides the roti with a balanced, nutty taste and a hearty texture. Ajwain (carom seeds) adds a subtle hint of spice and aids in digestion, while turmeric powder enhances both the color and flavor. The addition of red chili powder and cumin powder gives the roti a mild kick, making it aromatic and flavorful. Salt and a bit of oil or ghee help bind the dough together, ensuring that each roti turns out soft yet slightly crispy.

  • Gram flour (besan)
  • Whole wheat flour
  • Ajwain (carom seeds)
  • Turmeric powder
  • Red chili powder
  • Cumin powder

See recipe card for quantities.

Instructions

  1. Take a mixing bowl and add gram flour, wheat flour, and the other ingredients. Mix well. Gradually add water while mixing, then knead until a smooth dough forms.
  1. Cover the dough with a damp cloth and let it rest for about 10 minutes.
  1. After 10 minutes, divide the dough into lemon-sized balls.
  1. Lightly dust each ball with wheat flour and roll it out into a slightly thick roti. Repeat this process for the remaining dough balls.
  1. Heat a pan over medium heat. Once hot, place a roti on the pan and cook until the bottom side is lightly golden.
  1. Flip and cook the other side until bubbles start to form. Apply butter or oil on both sides, then remove from the heat. Repeat the process for the remaining rotis. Serve the delicious Missi Roti with your favorite side dish and enjoy this flavorful Indian bread.

Substitutions

Here are some substitutions you can make for Missi Roti to suit different dietary preferences or to customize the flavor:

  1. Gluten-Free: Use gluten-free flour (like rice flour or Sorghum flour or any millet flour) in place of whole wheat flour.
  2. Vegan: Instead of using ghee or butter, use olive oil or coconut oil to cook the rotis.
  3. Higher Protein: Add chickpea flour (besan) as the primary flour to make a more protein-rich version, or combine it with quinoa flour.
  4. Millet Roti: Replace whole wheat flour with millet flour (like bajra or jowar flour) for a gluten-free, nutrient-packed alternative.
  5. Herb Variations: Add herbs like cilantro or fenugreek leaves (methi) for extra flavor and nutrients.

Variations

Here are a few variations you can try while making Missi Roti to suit different tastes and preferences:

  1. Herbed Missi Roti: Add finely chopped coriander leaves or fenugreek leaves (methi) to the dough for extra flavor and freshness.
  2. Cheese Stuffed Missi Roti: For a delicious twist, stuff the dough with grated cheese (like paneer or mozzarella) and roll it out to create a cheesy version of Missi Roti.
  3. Spicy Missi Roti: Increase the red chili powder or add green chilies and garam masala for a spicier, more aromatic version of the roti.
  4. Masala Missi Roti: Incorporate cumin seeds, carom seeds (ajwain), and black sesame seeds into the dough for an extra burst of flavor.
  5. Millet Flour Missi Roti: Swap out whole wheat flour for bajra (pearl millet) or jowar (sorghum) flour to make a gluten-free version of the roti.
  6. Sweet Missi Roti: Add a tablespoon of jaggery or honey to the dough, along with cardamom powder, for a lightly sweet variation.
  7. Garlic Missi Roti: Add minced garlic or garlic powder to the dough for a flavorful garlicky version, which pairs well with curries.
  8. Chia and Flaxseed Missi Roti: Mix in ground chia seeds and flaxseeds for a healthier, nutrient-packed variation.

Feel free to experiment with these variations to add your unique touch to Missi Roti!

Storage

  1. Room Temperature: If you plan to consume the rotis within a day or two, store them in an airtight container or wrap them in a clean cloth and keep them at room temperature. They will stay soft for up to 2 days.
  2. Refrigeration: For longer storage, refrigerate the rotis in an airtight container or wrapped in foil. They can stay fresh for up to 3-4 days in the fridge.
  3. Freezing: To store for a longer period, place the rotis in a freezer-safe bag or wrap them individually in plastic wrap and then store them in a zip-lock bag. They can be frozen for up to 1 month. When ready to eat, reheat on a hot pan or microwave.
  4. Reheating: To reheat, warm the roti on a pan or in the microwave. You can brush a little butter or ghee on it to restore its softness and flavor.

Proper storage ensures that your Missi Roti stays fresh and delicious for as long as possible!

Top Tip

To achieve the perfect texture, always let the dough rest for at least 10-15 minutes after kneading. This helps the flours absorb moisture fully, making the dough softer and easier to roll out. Additionally, cook the roti on medium heat to ensure it cooks through evenly and becomes slightly crispy on the outside without burning.
