Why Broken Wheat is Healthy?

Broken Wheat is made by grinding whole raw wheat coarsely. There is no refining of wheat. This broken wheat is also referred as Dalia, Cracked Wheat and Couscous. 1 Cup of broken wheat has only fewer calories and carbohydrates than White or brown rice. Because of its rich content of fiber, Broken wheat is substituted for rice especially for diabetic people and also recommended for diet substitution.

How to make Broken Wheat Idli?

Making Broken Wheat Idli is similar to the making of  Sooji(Rava) Idli. We need to first dry roast broken wheat nicely in low flame without burning and mixed with tempering, grated carrot, chopped coriander leaves along with salt. Then curd and water are added to mix the dry ingredients to make a batter. Let the batter rest for 10 mins for the wheat to soften and absorb the sourness of curd. Then add more water or buttermilk to adjust the consistency. Finally adding Eno fruit salt, just before steaming the idli. Eno salt help to aerate the batter and makes the Idli puff up while steaming in turn making the idli soft.

How to Serve Samba Godhuma Rava Idli?

Serve the delicious, instant Samba Godhuma Rava idli with Tomato Chutney, Kara Chutney, or any Chutney of your choice. Even a simple Idli Podi is a very good combination for this Broken Wheat Idli.

Tips to make Broken Wheat Idli

  1. Roasting of Rava is very important as it helps to build very good flavor. Do not skip this step. Dry roast the wheat in a low to medium flame till you get a nice aroma.
  2. Use of Sour curd is recommended. If you don't have a sour curd, you can add little quantity of lemon juice in addition to the curd
  3. Add shredded vegetable of your choice and liking of your family.
  4. As i mentioned earlier, additional of Eno Fruit Salt helps to make fluffy idli.

Broken Wheat Idli is an instant Idli made with healthy and nutritious Broken wheat. There is a no soaking, grinding or fermentation process required to make this Idli. It's one of the very quick and easy to make tasty Idli. Serve with Tomato Chutney and Idli podi and enjoy this delicious Idli

Ingredients

  • 1 cup Samba Godhumai Rava (Broken Wheat / Dalia) 1 Cup - 250ml
  • ½ cup Curd (Plain Yogurt)
  • 1 Carrot Grated
  • ½ teaspoon Eno Salt
  • ¾ cup Water Adjust as needed
  • ¾ teaspoon Salt Adjust As Needed
  • 1 tablespoon Coriander Leaves Finely Chopped

For Tempering

  • 2 teaspoon Oil
  • 1 teaspoon Mustard Seeds
  • 5-6 Cashews
  • 1 tablespoon Split Bengal Gram (Channa Dal / Kadalaparuppu)
  • Few Curry
  • 1 Green Chili
  • 1 teaspoon Ginger Grated

Instructions 

Roasting Broken Wheat

  • Heat a pan and add broken wheat and dry roast it for 2-3 minutes. Take this dry roasted broken wheat in a mixing bowl or vessel.

Tempering Process

  • Add oil to the pan and add mustard seeds and when the mustard seeds starts to sputter, add spilt urid dal, channa dal and fry till the dal turns golden brown color. Add cashews and fry till light brown. Finally add curry leaves and fry for 2 seconds. Switch off the flame

Prepare Idli Batter

  • In a mixing bowl, take the roasted broken wheat. Add tempering, grated carrot, coriander leaves and salt and give a good mix
  • To this now, add curd and give a mix. Add water little by little and make it to thick batter. Keep the batter aside for 10 mins. Broken wheat absorbs the curd and water.
  • After 10 mins, again add water and adjust the consistency. Add eno salt and mix gently. Eno salt makes the idli fluffy and salt. You can substitute with baking salt also.

Steam Cooking Idli

  • Grease the idli plates and fill in the batter in each idli mould and steam cook for 20 minutes
  • Once the steam cooking is done, allow the idli to cool off for couple of minutes and then take out the idli gently.

Serving Time

  • Yummy Broken Wheat Idli | Samba Godhumai Rava Idli | Dalia Idli is now ready to serve with idli milagai podi or any chutney varieties
