Kala Jamun Recipe | How to make Kala Jamun with Nuts Filling

Gulab Jamun is a favourite dessert for many of us. Kala Jamun is also one of the popular dessert in Indian Sweet stalls. Kala Jamun are usually dry and in dark brown or black color. Black color doesn't mean they are burnt. Its just we are deep frying them. Also we are refrying the golden brown jamun so they turn deep brown and also much more crispier. This is one of the tastiest and delicious dessert. Also, mostly kala jamun has a filling. ¼th Quantity of the dough is mixed with food color along with powdered sugar and that would be so delicious. I have made a small change. Instead of just using a food color, I have made nuts powder and stuffed the Jamun. Try this Kala Jamun and I m sure you would love it !

Ingredients:
Milk Powder 2 Cups*
Maida ⅔ Cup
Semolina (Sooji) 2 Tablespoon
Milk 1 Cup
Sugar 2 Cups
Water 2 Cups
Cardamom Powder ¼ teaspoon
Ghee 2 Tablespoon
Almonds 4
Cashew 1 Tablespoon
Pistachios 1 Tablespoon
Powdered Sugar 2 Tablespoon
Ghee  For Deep Frying

* 1 Cup = 250ml

Method:

  1. Grind the nuts to a fine powder and set it aside
  2. First take a mixing bowl, add milk powder, maida, semolina and mix well. Add milk little by little and knead everything to a smooth dough. Add ghee and knead well
  3. Take a sauce pan and add sugar. Add water and stir well till the sugar dissolves
  4. Add cardamom powder and boil the sugar syrup for 5 minutes and then switch off the flame. 
  5. Now take ¼th quantity of the Jamun dough and mix powdered sugar, nuts and mix well. 
  6. Make small gooseberry sized balls out of the nuts mixture. Also make Lemon sized balls out of the rest of the dough.
  7. Press each dough ball and place the filling and close it and make into Oval shape Jamun
  8. Heat ghee in a pan. Keep the flame medium. Gently drop 3-4 Jamuns and deep fry them till they are golden color. 
  9. Then take out the fried Jamun and place it in paper towel and fry the next batch. When the next batch is done, again, add the first batch fried Jamuns and fry it till they become dark brown or black. Repeat the same process till you fry all the Jamuns. 
  10. Gently drop the fried Jamuns in the sugar syrup. The sugar syrup should be warm. So, by the time you deep fry the Jamuns, if the syrup is cold, then reheat it in low flame till the syrup is warm and then add the Kala Jamun
  11. Serve the delicious Kala Jamun Chilled and enjoy your wonderful dessert!
