
Carrot Halwa is a perfect dessert for any occasions. The rich color, delectable taste and flavor of this halwa makes it extraordinary than any of the Indian Desserts. Carrot halwa is a jewel in the crown of Indian Desserts. Preparing this halwa conventionally using whole milk on an open pan in stove top takes more time and effort. This Instant Pot Carrot Halwa version is a quick and easy way to make Carrot Halwa.

Tips to get perfect Carrot Halwa:
- Selection of Carrots: Tender and red carrots are best choice for halwa. I used to get ooty carrots which are juicy, tender and has a rich color
- Shredded Carrot : We need shredded or grated carrot for this halwa. I used food processor to shred the carrots
- Sautéing the carrots and cooking carrot and milk first speeds up the process.
- Adding Khoya thickens the halwa. We can replace with dry milk powder or condensed milk too
- Keep Stirring the halwa in sauté mode. The heat in sauté mode is high and so we should make sure the halwa doesn't stick to bottom of the pot.
Vegan Alterations:
- Use Almond milk or coconut milk in place of regular milk
- Vegan Butter can be used in place of ghee
- Use Almond flour instead of khoya or milk powder

Carrot Halwa in Instant Pot makes the halwa process quick and easy without much work to hands. Carrot halwa is a perfect dessert for any parties or events. Carrot halwa with Vanilla icecream is a great combo!

Ingredients
- 4 Cups Grated Carrot Tightly packed. 1 Cup - 250ml
- 1 Cup Milk Whole Milk is best choice
- ⅔ Cup Sugar
- ½ Cup Unsweetened Khova We can use milk powder or almond meal instead
- ¼ Cup Ghee
- 2 tablespoon Almonds Sliced or mixed nuts to garnish
Instructions
- Turn the Instant Pot to "Saute" Mode. Once the indicator says "On", add 1 tablespoon of ghee to the pot
- When the Ghee is hot, add the grated carrot to the pan and saute the carrots for 2-3 minutes
- Add 1 Cup of milk to the instant pot and give a mix.
- Cancel the "Saute" mode. Close the Instant pot with the lid and turn the vent to "Sealing" position.
- Press the "Manual/Pressure Cook" mode and set the timer to 5 mins. Let the carrot+milk mixture gets nicely cooked. After 5 mins when the timer is off, press the "Cancel" button. Quick release the Vent. When ever we are doing the quick release, make sure to use a cloth on top of the vent and then release the vent to make sure the steam is not hurting our hands.
- Open the Instant pot lid. Turn the Instant Pot to Saute Mode. We can see the carrots are nicely cooked and most of the milk is absorbed already. Now add sugar, khova, cardamom and give a good mix. Adding sugar again makes the carrot mixture to dilute. So cook the carrot mixture in suate mode till all the moisture is absorbed
- Once the carrot mixture is dry, add 2 tablespoon of ghee and give a mix. Keep cooking the halwa. Add rest of ghee in regular intervals and cook the halwa till the ghee starts to separate and the halwa starts to roll without sticking to sides of pan. Saute mode in Instant Pot is high heat mode that will speed the process. But we also need to make sure the halwa doesn't get burnt or stick to bottom of the pot.
- Finally garnish with nuts. Cancel the "Saute" mode and take the carrot halwa in an air-tight container.
- Serve the Carrot Halwa hot or top with Vanilla Ice Cream and enjoy this rich and delicious halwa
Notes
- We can make this vegan by adding Almond milk instead of regular milk and use almond flour or meal in place of khoya. Also replace ghee with vegan butter.
- Garnish with nuts of your choice. If you have nut allergy you can exclude garnishing with nuts.
