Peanut rice is a delicious Rice variety made with peanuts and freshly ground spice powder. A very simple and easy to make variety rice. A perfect Rice variety that is quick to make and perfect for any parties or any potluck. The peanuts & sesame seeds add a nice flavour to the whole rice!

Peanut rice is a delicious Rice variety made with peanuts and freshly ground spice powder. A very simple and easy to make variety rice.  A perfect Rice variety that is quick to make and perfect for any parties or any potluck. The peanuts & sesame seeds add a nice flavour to the whole rice! Also its a quick and yummy treat for Kids Lunch Box.
A Very tasty rice variety made by tossing cooked rice in flavorful and spicy Peanut Powder!
Mostly for Lunch box, its always better to give variety rices instead or Rasam/Kuzhambu/Sambar etc. Rasam/Kuzhambu/Sambar becomes more thick and all the gravy will be absorbed. Thats the reason we prefer to give variety rices like Lemon Rice, Tomato Rice, Coconut Rice etc. Kids will be mostly talking with their friends and have more distraction. So Its always a good choice to pack a rice with stir-fry veggie mixed in the rice itself that way they will surely eat the veggie too. I always keep lemon rice with ladysfinger mixed together or brinjal fry. That way I make sure they don’t accidentally spill the veggie or just to miss to take the veggie box (mostly by purpose 🙂 ) .

 

This Peanut Rice Tastes so good with Baby Potato Fry or even with Ladysfinger Fry. Try making this yummy rice variety for lunch and see how your kid finishes her lunch box fully :-).

Ingredients

  • 2 Cups Cooked Rice 1 Cup - 250ml
  • 1/2 Cup Raw Peanuts
  • 2 Pieces Red Chili
  • 1/2 tsp Pepper
  • 2 Tablespoon Desiccated Coconut
  • 2 tsp Sesame Seeds
  • 1/2 tsp Oil

For Tempering

  • 2 Tablespoon Sesame Oil
  • 1 tsp Mustard Seeds
  • 1 tsp Split Urad Dal
  • 1 tsp Split Bengal Gram (Channa Dal / Kadalaparuppu)
  • 1 Tablespoon Peanuts
  • Few Curry Leaves

Instructions 

  • Cook the rice and spread the cooked rice in a plate to have a fluffy rice
  • Heat 1/2 teaspoon oil in a pan and roast the peanuts till the peanuts turn brown. Set this roasted peanuts aside
  • Again in the same pan, add red chilli, peppercorns, sesame seeds and fry till the sesame seeds starts to sputter. Then add the dry grated coconut and fry till the coconut turns brown color
  • First add the roasted ingredients to the mixer jar, except peanuts. Grind the ingredients to a coarse powder
  • Then add the roasted peanuts to the mixer jar and grind it to a coarse powder. Set this peanut based spice powder aside
  • Heat gingelly oil in a pan. Add mustard seeds and allow it to sputter. Then add split Urad dal, gram dal and fry the dals till it turns golden brown.
  • Then, add peanuts and fry it for few seconds. Finally add few curry leaves and saute for few seconds. Add the peanut spice powder and saute for a minute
  • Add cooked fluffy rice along with salt and mix well gently. Do not mash the rice. Mix gently and add it to the serving bowl
  • The delicious Peanut Rice is ready to serve! Serve with Potato Fry and papad and enjoy the rice!

Method:

What is the proportion for sesame seeds as you forgot to mention it in the ingredients list??
