Carrot poriyal, a healthy poriyal for any rice varieties. This recipe is slightly different from the traditional way of doing poriyal. Generally we cook the vegetable and then do the seasoning. I tasted this wonderful taste of carrot poriyal in one of my Telugu friends home and the variation made the dish an extraordinary taste. Especially many kids doesn't like to eat carrot but with this recipe having a variation from the traditional way would be liked by all.

Carrot Poriyal is a simple and tasty stiry fry made with grated carrot and coconut spice powder. The spice powder that we make using coconut, roasted gram dal, red chili and jeera enhances the flavor and taste of this poriyal. Goes very well as an accompaniment to any rice varieties and also with Roti

Ingredients

  • 250 grams Carrot (or 3 large carrots)
  • ¼ teaspoon Turmeric Powder
  • 1 teaspoon Salt adjust to your taste

For Spice Powder

  • 2 tablespoon Grated Coconut
  • 2 tablespoon Roasted Gram Dal (Pottukadalai / Dhaliya)
  • 2 nos Red Chili
  • ½ teaspoon Cumin Seeds

For Tempering

  • 1 teaspoon Cooking Oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Split Urad Dal
  • Few Curry Leaves

Instructions 

Preparation

  • Wash the carrots in water and then pat it dry, peel the skin and grate all the carrots 

Making the Curry Powder

  • Take grated Coconut, Jeera, Red Chili and Roasted Gram Dal and grind it to nice powder. Take this aside.

Start with Tempering

  • Take a pan, add oil and when the oil is hot, add mustard seeds. When the mustard seeds starts to sputter, add split urid dal and fry till it becomes golden brown color.

Start Making the Poriyal

  • Add curry leaves and add the grated carrot and keep the flame medium
  • Add turmeric and salt and mix well and cover it with a lid. We dont need to add water as the grated carrot would cook easily in steam
  • When the carrots are cooked nicely, add the ground curry powder and mix well and remove from flame
  • The mouth-watering carrot poriyal is ready to serve with any rice dishes. Even we can mix plain rice with carrot poriyal along with a teaspoon of ghee and the taste is divine.

Notes

  • Instead of grating the carrots you an also take the carrots into the mixer and give few pulses. This will give you roughly chopped carrots. To save time and effort you can follow this method 
  • You can replace the roasted gram dal with peanuts.

Method to make Carrot Stir-fry with step by step pictures :

  • Wash the carrots in water and then pat it dry, peel the skin and grate all the carrots

  • Grind the grinding ingredients (grated coconut, jeera, red chili and roasted gram dal to a nice powder

  • Keep aside the ground spice powder. We will add this spice powder to the carrot poriyal at the end.

  • Take a pan, add oil and when the oil is hot, add mustard seeds. When the mustard seeds starts to sputter, add split urid dal and fry till it becomes golden brown color. Add Curry Leaves and mix well

  • With tempering, now add add the grated carrot and keep the flame medium

  • Add turmeric and salt and mix well. We don't need to add water as the grated carrot would cook easily

  • Cover the pan with the lid and allow the carrot to cook. The carrot cooks very fast as it's already grated. It might take only about 5 minutes or less

  • When the carrots are cooked nicely, add the ground curry powder and mix well and remove from flame

  • The mouth-watering carrot poriyal is ready to serve with any rice dishes. Even we can mix plain rice with carrot poriyal along with a teaspoon of ghee and the taste is divine.
